Rolled Coconut Pecan Cookies

Every Sunday night I make the cookies for the family. Sometimes with the children, sometimes for the children. It's always a special treat. Today, I decided to make some that were a little special, because although I love chocolate chip cookies (especially the dough) I love a little variety. So why not add a couple of my favorite ingredients? I had already made my regular chocolate chip cookie recipe and the last batch was ready to go into the oven when I decided I was going to make this batch for me and my wonderful husband. I pulled out some unsweetened coconut flakes and added some chopped pecans, then rolled each ball of dough in the nut mixture.

Here's my no fail chocolate chip cookie recipe:
1/2 C Butter (not margarine)
1/2 C butter flavored shortening
3/4 C granulated sugar
3/4 C brown sugar
2 eggs
2 tsp vanilla
1 tsp baking soda
1 tsp salt
2-1/2 C baking flour or whole wheat pastry flour.
1 bag semi-sweet chocolate chips
1/2 C pecans
1/2 C unsweetened coconut flakes
Cream together sugars and shortening. Mix in eggs until well blended. Add vanilla, soda, salt. Mix well, add flour. Pour in chocolate chips. In separate bowl, mix together pecans and coconut flakes. Roll dough into balls with tsp. scoop and roll into nut mixture. Place onto greased cookie sheet. Bake in preheated 375 degree oven for 7 minutes.

They were so delicious we only have crumbs left over. Yeah. I surprisingly almost had to fight off the kids for them...good thing I made a whole cookie sheet of them or they may not have been able to try them. ;)
